This book appears to generally cover the information in Foods 1, Foods 2, Culinary 1 and even Culinary 2 & 3. The information looks correct and accurate according to current industry standards. Overall looks like a very useful text book for the Culinary Pathway, with the exception of Baking and Pastry.
